You can't.
Change the content of your site and Adsense will automatically try to match the ads to your content.
So the only way you can get the ads to change is by making chnges within your site and it's content.

Basically what you're saying is that the ads that are currently being generated aren't relevant to your website's content? Please correct me if I'm wrong. In order to make your ads more relevant you'll need to target certain parts of your website. Here is the link that shows you how to do this:

You cant but you can filter the ads - check out the competitive ad filter

You can't pick an exact ads for your site but you can actually generate related ads. You just have to post a content or article relating to what you want, then the google adsense crawler will then search for related ads in their ad pool to show in your site.
